Neither measurement alone is definitive because other variables affect solution viscosity, but a value noticeably above 200 cps at 1.0 g/l is a reason to ask your supplier to confirm the batch suffix.

Does the viscosity reversal between VHM and VHMU matter for my process?

It depends on the operating concentration. If your process runs at or above 3 g/l, VHM gives higher viscosity. If you dilute to around 1.0 g/l before dosing, VHMU gives higher viscosity. Using the wrong variant's data for make-up or dosage calculations at dilute concentration produces a systematic error in that direction. Confirm the variant suffix before specifying a dose rate.
